Spicy Grilled Chicken with Avocado Salsa

So, I posted this photo on Facebook last night, and a friend has asked me for the recipe.  Rather than do a lengthy update there, I thought I’d upload it here instead.

Most of the time when I cook I don’t really measure things out, so all the measurements are approximate.

I hope you enjoy this:

Spicy Grilled Chicken with Avocado Salsa

Spicy Grilled Chicken with Avocado Salsa

2-boneless, skinless chicken breasts (I use organic, free-range from Costco)

Rub with:
Olive oil
Black Pepper
Garlic powder
Chipotle Chili Powder

Grill till done – on my (gas) grill, that means 3 minutes/side direct, then 7-9 minutes indirect.

1 Avocado, diced to ½” pieces.
Juice of 1 Lime.
2 slices red onion, chopped fine.
A few sprigs of cilantro, chopped fine.
A couple handfuls of grape tomatoes, halved.
½ English Cucumber, peeled, seeded, cut into roughly ½” pieces.
½ jalapeno, chopped fine.
Small can sliced black olives.
About 2 tsp each, garlic powder, ground cumin, dried basil (crushed fine), dried oregano (also crushed fine).
Salt and pepper to taste.

Mix together thoroughly, but carefully so as not to crush the avocado.

Simply put the grilled chicken on a warm plate, and smother with the salsa.

If you decide to cook it, let me know how it turns out!

Independence Day

As I celebrate Independence Day and freedom, may I also remind myself to stay clear of the inner tyrannies of negative thoughts, old voices, self-defeating speech and behaviors.

Without people a country is nothing but a piece of land. If I am a patriot and I hate another American, then I’m not a patriot.

Today I will remember to walk with kindness, patience and understanding. Wishing you independence from anything that would bind or hurt you.

Have a wonderful and safe Independence Day.

Hello, Little Fear

This past week I was reminded.  Fear isn’t something I can see or hear or taste.  I can’t watch it in the sky or pick it up off the ground.  Because it doesn’t actually exist in the tangible world.  My fears are creations of my own mind, and outside of my mind they have no basis in reality.  I find this realization to be very liberating.  If the fear exists only in my mind, then my mind has total control over it.  Yes, if a bear is chasing me through the forest, there is a good reason for my fear.  It creates physiological changes in my body chemistry that make me better able to fight or escape.  But most of the time fear is a ridiculous phantom parasite feeding on anything good or lovely or positive in my life.  Even knowing this I sometimes get caught up in it though.

To which other emotions or thoughts might this principle also apply?  Anger?  Hatred?  Even love?  And if it does, what does that tell me about my ability to control every aspect of my life?  My belief is that my life and especially my reactions to what happens around me, are exclusively under my control.  Of course there are degrees to everything and exceptions to every rule.  What I’m talking about here is the course of normal, everyday life.  These things are my responsibility, and under my control.

Meditation is all about living in this very moment and noticing the things that go by without judging them.  I don’t have be to ruled by my fears or any other emotions.  Or much of anything else either.

“Hello, little fear.  Yes, I see you there, and I’ll even hold your hand for a second.  Ok, now I’m going back to living in this moment.”

Wishing you a wonderful day.

Reasons People Don’t Meditate

Sometimes when I talk with people about meditation they tell me how difficult it is, and why they don’t believe they can do it:

I can’t still my mind

Right, you can’t.  And it’s not required that you do.  In fact, that’s why you need to meditate.  Saying, “I can’t meditate because I can’t still my mind,” is like saying, “I can’t take an aspirin because I have a headache.”

I don’t have a zen quiet place

You don’t need one.  There will always be distractions in meditation – some external, some internal.  This is normal, not “bad” or “wrong.”  You can notice these distractions without judgement and then return your focus to your breathing.

I don’t have time

I don’t have time not to.  Meditation improves your thought process and makes you more efficient.  As little as 10 minutes, practiced consistently, will make noticeable changes in your mental  and emotional well being.

Music from Atmospheric Oceans

_MG_7496 ocean sunset wave zoom (2)Today I’m really excited to share with you a few minutes of music from my upcoming CD tentatively titled Atmospheric Oceans.

This is quite possibly the most ambient and minimal music I’ve ever produced.  At every step in the process I’ve kept in mind the idea that this will be used to bring you an atmosphere of healing and relaxation.

I hope you enjoy this sample, and I’m looking forward to sharing more with you in the near future.

Instant changes

This morning the husband of a co-worker is fighting for his life after suffering a massive heart attack. He is 33 years old. If you’re so inclined, prayers, positive energy, whatever you practice would be very much appreciated. I am reminded how tenuous life can be at times and what enormous changes can take place instantly. Today I will remember to shower the people I love with love.

Wishing you a fantastic day.
