Spicy Grilled Chicken with Avocado Salsa

So, I posted this photo on Facebook last night, and a friend has asked me for the recipe.  Rather than do a lengthy update there, I thought I’d upload it here instead.

Most of the time when I cook I don’t really measure things out, so all the measurements are approximate.

Spicy Grilled Chicken with Avocado Salsa

 

 

 

 

 

 

 

Chicken:
2-boneless, skinless chicken breasts (I use organic, free-range from Costco)

Rub with:
Olive oil
Salt
Black Pepper
Garlic powder
Chipotle Chili Powder

Grill till done – on my (gas) grill, that means 3 minutes/side direct, then 7-9 minutes indirect.

Salsa:
1 Avocado, diced to ½” pieces.
Juice of 1 Lime.
2 slices red onion, chopped fine.
A few sprigs of cilantro, chopped fine.
A couple handfuls of grape tomatoes, halved.
½ English Cucumber, peeled, seeded, cut into roughly ½” pieces.
½ jalapeno, chopped fine.
Small can sliced black olives.
About 2 tsp each, garlic powder, ground cumin, dried basil (crushed fine), dried oregano (also crushed fine).
Salt and pepper to taste.

Mix together thoroughly, but carefully so as not to crush the avocado.

Simply put the grilled chicken on a warm plate, and smother with the salsa.
